Happy Friday everyone! Hopefully you enjoyed the ice cream themed party yesterday. Today I have put together an amazing recipe for ice cream cupcakes. I got the inspiration for this post when I found the ice cream cupcakes post by A Pumpkin and A Princess.  The great thing about these is that you can make them ahead of time, store them in the freezer, and pull a few out when you want a cool treat.
To make these you will need:
     - A brownie, cookie or cake mix for the base
     - A carton of your favorite ice cream
     - A can of whipped topping or frosting
     - and Sprinkles!

To start mix together your brownie, cookie or cake mix that you picked out. This will make the base of the ice cream cupcakes. Once you have the batter mixed put your cupcake liners into the cupcake pan. The batter will be used to establish a base for your ice cream cupcake. For brownie and cake mixes you will only want to put approximately 1 tablespoon into each cupcake liner. If you are using cookie dough flatten the dough until it is about 1/3-1/2 inch thick. These will then go into the oven to bake for no more than 10-12 minutes depending on the batter. 
Once the batter has cooked remove the pan from the oven and let it cool all the way. If they are still warm when you add the ice cream it will cause it to melt and make a huge mess. To add the ice cream you can take an ice cream scoop or just spread it to fill the cups evenly (it all just depends on how you would like your cupcakes to look).
Personally, I am a fan of the scooped look for my ice cream. Once you scoop the ice cream you will want to stick them in the freezer until they are completely frozen. Once they have frozen, you can take them out to decorate if you are planning on serving them right away. If not, the best way to store them in the freezer is without the icing or whipped topping. 

When you are ready to serve you can pull out the cupcakes, display them on a platter, add your icing and sprinkles, and enjoy!  
A great thing about these cupcakes is that you can mix-and-match the mixes and ice cream flavors to make your favorite combinations or to coordinate with your party's theme. The mint chocolate chip ones made by A Pumpkin and A Princess were made for St.Patrick's Day.
